In 2017, 3 individuals with different approaches to vegetarianism got together and turned a small cafe in the popular Roma district in Mexico City, into a fast-casual restaurant built on a scalable, modular business model to be used as a franchise, and designed to popularize vegetarian food, presenting it as real food, approachable, convenient, sophisticated yet accesible. The slogan, “for those who want to give something back to the world” captured our ideals, connecting with those who care for the planet. Social media allowed us to show that vegetarian, vegan and gluten-free food could be tempting for everyone. The business model allows for easy deployment on new, limited space locations with light infrastucture
Over 6 months in 2018 a recipe book with over 100 dishes gathered from around the world was developed, and Alo quickly enjoyed success for a few months once it opened in October, 2019. A few months later when the pandemic struck, the business moved to a fully online model operating from a dark kitchen, quickly adapting dishes to make them ideal for food delivery, but the business did not flourish until a new location was opened at a popular restaurant location in Napoles, a trendy area near the WTC building, once the lockdown eased.
In all, the menu consist of several categories of fast food: Burgers, tacos, burritos, pastas, soups and bowls, to go with a collection of 11 different side dishes. There is a long list of vegan and gluten-free desserts and pastries. Every weekend brings a large crowd for breakfast and specials, and a separate menu is available for this including vegan paella, cochinita, lasagna and pozole.
As part of the Municipality’s program to face the pandemic, the restaurant has an 8 x 4m outdoor sitting area with 5 picnic tables (with space for more) and a warmly lit canopy, in addition to normal outside tables; the inside dining area is 8 x 4m with a coffee bar and counter, a long wooden bench, 5 dark wood tables and a small lounge area. The kitchen in the back is an irregular 5 x2m triangular room plus a 6 x4 triangular patio. Some new equipent might of course be desirable.
The contract still has one year to go, but the owner is flexible if a new location were desired for relocation. The store is a grab by itself, given its key location and ambience. Rent is reasonable.
Currently the restaurant is working with a reduced crew while we are restructuing the business, optimizing procedures and recipes. It is waiting for someone to bring new energy and momentum to this beautiful proyect.
